Cooking Instructions

Wash totapuri mango and cut it into small pieces and boil it in a cooker.
Make a pulp and measure it. Take double the amount of sugar from the pulp. - 2
Add water to sugar and heat it. When there is a boil in it add the pulp to it and mix well. After a boil turn off the gas.

After the mixture cools down strain it. Add salt, dried cumin powder, yellow food colour and mix it well. Store in an airtight bottle. By the time of serving add water and ice cubes.

Aampanna is an Indian drink made from tota puri raw mango. It is very hot during summer season. This hot wind often leads to diarrhea. As ampanna is a drink with heat resistant properties, it is said that drinking ampanna does not cause diarrhea. Gujaratis also know ampanna as bafla. Almost all ampannas use sugar but here I have made ampanna using jaggery.
