Aam Panna

Aampanna is an Indian drink made from tota puri raw mango. It is very hot during summer season. This hot wind often leads to diarrhea. As ampanna is a drink with heat resistant properties, it is said that drinking ampanna does not cause diarrhea. Gujaratis also know ampanna as bafla. Almost all ampannas use sugar but here I have made ampanna using jaggery. I have used jaggery as it is imperative to use jaggery for health reasons.

Wash the tota puri raw mango, peel it and cut it into slices.

Put this cut in a cooker, pour a glass of water in it, add salt, blow 3 whistles, turn off the gas and let the cooker cool down.

Once the cooker cools down, remove the boiled mangoes with water in a pan. Heat the pan on gas and add jaggery and mint leaves. Melt jaggery and turn off the gas. Now when this mixture cools down, blend it with a blender. Then add black pepper powder, crushed cumin seeds and black salt powder.

Now roll it with a roller. Then strain it through a sieve. Then fill it in a glass bottle. When you want to drink this drink, you can take it in a glass and add some cold water to it.
