Cooking Instructions

Wash totapuri mango and cut it into small pieces and boil in a cooker. Make a pulp and measure it. Take double amount of sugar from the pulp.

Add water to sugar and heat it. When it gets boil add mango pulp to it and mix well. After a boil turn off the gas.

When the mixture cools down strain it and add salt, roasted jeera powder and black salt. If you need add yellow food colour in it and mix well.

By the time of serving take some portion of aam panna and add chilled water,ice cubes and garnish with mint leaves. Beat the heat with this wonderful aam panna.

#maniaAam Panna is a tangy refreshing summer drink made with unripe sour green mangoes, fresh mint, sugar, salt, black pepper, and roasted cumin powder. This beverage is popular in India during the scorching summer months for its heat-resistant properties. This seasonal tropical fruit when raw and unripe is boiled and blended with the addition of an assortment of spices which makes it all the more flavourful. The spices and raw mangoes when cooked and blended with spices has a cooling effect and prevent loss of sodium due to excessive sweating and also helps in gastronomical problems. This drink can be made fresh and consumed immediately or made into Aam Panna Concentrate. This concentrate can be refrigerated and stored for 6 months by adding preservatives. Aampanna is an Indian drink made from tota puri raw mango. It is very hot during summer season. This hot wind often leads to diarrhea. As ampanna is a drink with heat resistant properties, it is said that drinking ampanna does not cause diarrhea. Gujaratis also know ampanna as bafla. Almost all ampannas use sugar but here I have made ampanna using jaggery.
