Cornmeal or makkai aata papadi is very crispy & tasty snacks for diwali.
Cooking Instructions
- 1
Take a bowl add cornmeal.
Add all spices & oil.
Knead semi soft dough with water. Rest for 5 minutes. - 2
Make small balls of dough.
Roll with pin like poori. - 3
Make all like poori.
- 4
Heat a kadhai. Add oil.
Fry all corn meal poori till brown & crisp on medium flam. - 5
Remove out from oil.
Ready cornmeal Papadi. - 6
Serve cornmeal Papadi with chuteny & mix vegetable.

After several experiments with ingredient ratios, I was able to create this recipe.If you just use the hot water dough, it will have a crumbly texture since it's made of cornmeal. But if you touch it with your hands it turns sticky and glue-like.However, since it's less sticky and glutinous than regular hot water dough made with wheat flour, it doesn't affect the kneading or rising, so it's easy to use.Please be sure to use absolutely boiling hot water, to turn the flour glutinous! I wanted to make a healthy snack made with cornmeal, so after many attempts, I came up with this. They also come out great if made with vegetable oil. If using vegetable oil, 10 g will give you a biscuit-type cookie and 20 g will give you more of a cookie texture.
