Cooking Instructions

Initially wash methi leaves & coriander leaves with water well. Let it pat dry on kitchen napkin & chop. Grate boiled potato.

Take a mixing bowl. Add mashed potato + chopped methi & coriander leaves. Add spices like green paste + coriander & cumin powder + Asafoetida + red chili powder + salt + turmeric (optional). Combine & mix spices + mashed potatoes+ methi + coriander leaves well. Knead it. It releases little moisture.

At this stage add bajra flour & wheat flour. Combine all ingredients well. Add very little water, 5-6 tsp. Knead again & make a semi soft dough. You may add water if required. Apply oil over kneaded dough.

Rest the for only 5 minutes. No need to rest more otherwise it will turn loose. Now make dough balls. Apply dry bajra flour on platform. Place a dough ball. Tap gently with palm to make it flatten. Then roll with rolling pin very gently. Roll thick paratha.

Heat tawa well. Place rolled paratha on it. Turn flame medium. After few seconds flip paratha. Apply ghee Or oil over roasted part. Roast from both sides until brown spot appears. It may puffs up.

Once roasted take out from tawa. Transfer into serving plate. Serve hot with curd or green thecha Or any chutney as you like. It goes well with butter also.
