Literally the easiest recipe in the world! Plus it makes the kitchen smell super good. Fluffy, moist and light— often a banana loaf can be dense, but not this one. So if you have any lonely bananas sitting around, this is the perfect way to use them. Enjoy.

Ingredients

60–70minutes
  1. 225 gself-raising flour
  2. 175 gcaster sugar
  3. 100 gsoftened butter/margarine
  4. 2eggs
  5. 2ripe banana (mashed)
  6. 2 tbspmilk
  7. 1 tspbaking powder

Cooking Instructions

    Preheat oven to 180C (doesn't matter whether it's fan or not) and then line a 17x9x9 cm loaf tin with baking paper.

    Put all the ingredients in a mixing bowl and whisk with an electric whisk (or by hand if you prefer) for about 2 minutes.

    Spoon the mixture into the loaf tin and then pop it in the oven for 45-60 minutes. If you've got a fan oven it'll will bake quicker– so watch out!

    When the loaf has turned a lovely deep golden brown take it out the oven and check with a skewer. (if it doesn't come out clean put it back in!!!)

    Leave it to cool for a bit, remove the paper and then slice and serve with or without butter. (Maybe a bit of peanut butter too!?)
