Ingredients

  1. 137 gmsBroccoli Florets (1 medium broccoli)
  2. 109 gms (shelled from 250 gms)Green Peas
  3. 200 gmsPaneer (Cottage Cheese), grated
  4. 2Potatoes, steamed and grated
  5. 1 tbspGhee (for sautéing)
  6. 2 tbspGhee (for frying kababs)
  7. To Crush in Mortar and Pestle:
  8. 1 1/2-inch Ginger
  9. 8Garlic Cloves
  10. 3Green Chilies
  11. Spice Mix:
  12. 1/2 tspBlack Pepper Powder
  13. 1 tbspRoasted Cumin Powder
  14. 1 tbspRoasted Coriander Powder
  15. 1 tbspSpicy Red Chili Powder
  16. Salt to taste

    Prepare the Broccoli-Green Peas Mixture:
    • Wash and dry broccoli florets completely. Pulse them in a blender to get a coarse texture.
    • Similarly, pulse green peas to a coarse texture. Combine with the broccoli in a mixing bowl.

    Crush the Ginger-Garlic-Green Chilies:
    • Use a mortar and pestle to crush ginger, garlic, and chilies into a coarse mixture.

    Cook the Broccoli-Green Peas Mixture:
    • Heat 1 tbsp ghee in a kadai. Add the crushed ginger-garlic-chili mixture and sauté for 30 seconds.
    • Add the broccoli and green peas mixture and cook on low-medium flame for 3-4 minutes to remove rawness and moisture.
    • Mix in the spice blend and cook for an additional 2 minutes. Allow the mixture to cool completely.

    Prepare the Kabab Mixture:
    • To the cooled broccoli-peas mixture, add grated paneer and steamed grated potatoes. Combine well. Add salt if needed.

    Shape into Kababs:
    • Grease a plate and cookie cutter with oil. Use the cookie cutter to shape the mixture into round kababs.
    • Place the shaped kababs in the freezer for 6-8 minutes to set.

    Cook the Kababs:
    • Heat a non-stick pan on low flame. Add a little ghee or oil and cook the kababs on both sides until golden brown, about 8-10 minutes per batch.
