Summers in India are very hot . Vegetables become very expensive at this time & they are scarce also .At such a time this recipe is a Blessing. It is not only light on the pocket but also quick to make with very few ingredients. It is usually served with roti.

So here is a recipe to suit not only budget but also the palette. Do try , it tastes amazing.

Ingredients

10 minutes
3 - 4 serves
  1. 300 gmsred tomatoes, roughly chopped
  2. 2 tspoil
  3. 1 tspghee
  4. 1/4 tspmustard seeds
  5. 1/4 tspcumin seeds
  6. 1 pinchasafoetida
  7. 1 tbspgreen chilii - ginger - garlic paste
  8. 1 tspred chili powder
  9. 1 tbspcoriander - cumin powder
  10. 1/2 tspturmeric powder
  11. 1/2 cupwater
  12. 1/4 cupBhavnagari ganthiya
  13. 1/4 cupsev
  14. Salt to taste
  15. Chopped coriander to garnish
  16. Bhavnagari ganthiya & sev to garnish

Cooking Instructions

    Take oil & ghee in a pan,add mustard seeds & cumin seeds When they both crackle, add asafoetida.

    Add green chilli - ginger- garlic paste. Saute for a minute. Add chopped tomatoes & salt.

  3. 3

    Cook the tomatoes till they become soft & a little mushy. Add all the dry masala. Add water & mix.

    Add jaggery.

    Cover & cook for 3 minutes.

    Finally add Bhavnagari ganthiya & sev. Mix.Garnish with chopped coriander & serve immediately with roti.

    Please note, add sev & ganthiya only while serving time or else sev will not be seen at all & ganthiya will become mushy & not hold shape at all. Also note that this is a summer time vegetable but can be made any time of the year & served with Bajri na Rotla & jaggery.
