Sev Tameta Nu Shaak is a delicious Kathiyawadi Gujarati curry. It is prepared by combining fried gram flour noodles (crunchy sev) with a spicy and sweet tomato and garlic gravy. This sabji is made popularly during the Jain's Festival Of Paryushan Parva when roots and other vegetables are not included in the diet. Enjoy as a main meal alongside gujarati rotli (rotis). This recipe is naturally vegan and gluten-free.

Sev Tameta Nu Shaak is a delicious Kathiyawadi Gujarati curry. It is prepared by combining fried gram flour noodles (crunchy sev) with a spicy and sweet tomato and garlic gravy. First upon wash the 3 tomatoes, roughly chopped and 2 tomatoes are add in mixer jar and blend it and make puree.

Then add garlic cloves and Kashmiri red chili powder to the masher, grind it and make a chutney.

Now heat oil in a pan on medium heat. Add mustard seeds and cumin seeds when they crackles add asafoetida, slit green chilli, turmeric powder and sweet curry leaves and mix, saute it.

Then add roughly chopped tomatoes and salt, mix it very well on medium gas flame for 3 to 4 minutes and cook it. Then add ginger paste, red chilli powder and coriander cumin powder and mix very well.

Now add tomato puree, mix well and saute on medium gas flame for 3 to 4 minutes till oil separates. Then add water, mix well and boil the sabji for 3 minutes.

Then add jaggery, mix well and cook for 1 minute.

Now add finely chopped green coriander leaves to this, mix well and cook for a while. Then add besan sev, mix well and turn off the flame of the gas. Serve this sabji hot.

Now our very yummy and delicious Kathiyawadi Sev Tameta Nu Shaak is ready for serve. Garnish with green coriander leaves and serve with rotis.

Notes :--
1) After adding sev, the shaak will go slightly thicker as sev will draw in moisture from the curry. 2) Add the sev just prior to serving to prevent it from becoming too soggy.
