📌Today I prepared Pav bhaji as a new recipe with a twist because some kids don't like to eat veggies. So I prepared it in a blender/ mixer jar to hide the veggie chunks. So they can eat pav bhaji happily.
📌 Pav is a type of bun not sweet but spongy and fluffy. Pav has to be cut in a slit and roasted in butter on both sides inside and outer.
📌 Bhaji means a mix of vegetables spiced with gravy and curry. It is steamed, boiled, chopped, sautéed, and mashed in butter.
📌 Pavbhaji is Mumbai Special Street Fast Food, served hot with slices of onions, coriander, and lemon.

Ingredients

  1. 8pav
  2. 2potatoes
  3. 2onions
  4. 3tomatoes
  5. 1carrot
  6. 1capsicum
  7. 1/2beetroot
  8. 1/4 cupgreen peas
  9. 2 tspoil
  10. 1 tspjeera
  11. 1/4 tsphing
  12. 1 pieceginger
  13. 6 clovesgarlic
  14. 1/2 tspturmeric powder
  15. 2 tspkashmiri red chili powder
  16. 1 tspcoriander jeera powder
  17. 1 tsppavbhaji masala
  18. 2 tspbutter for saute veggies
  19. Butter as required for pav
  20. Salt to taste
  21. Water as required
  22. 1 tsplemon juice
  23. 1 tspchopped coriander

Cooking Instructions

    Boil potatoes, carrot, beetroot, and green peas in a pressure cooker.

    Take a pan, add oil and butter, and add roughly cut onions and garlic cloves. Saute till it turns translucent and the aroma comes out.

    Add cut ginger, capsicum, and tomatoes. Saute till it turns soft and messy. Turn off the gas. Wait till it cools down completely.
    Take a mixer jar, add Sautéed Veggies and boiled veggies except potatoes. Blend it, make a smooth puree.

    Now add both oil and butter to a pan, add jeera, and hing. After a while add turmeric powder, red chili powder, coriander jeera powder, and pav bhaji masala. Stir well. Add blended puree and water as required to make a semi-thick gravy. Add mashed potatoes. Mix well.

    Cook for a couple of minutes. Add salt, lemon juice, sprinkle coriander, and a spoonful of butter. Ready to serve. Cut the pav in a slit, and apply butter. Roast all sides on a flat pan. Pav is ready to serve.

    Serve hot and spicy, hidden veggies buttery pavbhaji with onion slices, lemon, coriander, and butter. All kids will enjoy hidden veggies pavbhaji.
