Ingredients

  1. For Tikkis:
  2. 250 gms (1 cup)Organic Beetroot – steamed & grated
  3. 2Potatoes (3/4 cup) – steamed & grated
  4. 1/2Onion (1/4 cup) – finely chopped
  5. 3Green Chilies – finely chopped
  6. 1 inchGinger – grated
  7. 2 tbspFresh Coriander Leaves – chopped
  8. 3 tbspRoasted Salted Peanuts – roughly crushed
  9. 1 tbspRice Flour
  10. Salt to Taste
  11. 1 tspOlive Oil – for cooking
  12. For Green Chutney:
  13. 1 bunchFresh Coriander Leaves
  14. 1 sprigCurry Leaves
  15. 5Green Chilies (adjust to taste)
  16. 2Shallots
  17. 1 cloveGarlic
  18. 10Peppercorns (adjust to taste)
  19. 1 tspCumin Seeds
  20. 2 tbspRoasted Chana
  21. Salt to taste
  22. Juice of Half Lemon
  23. 3Ice Cubes

Cooking Instructions

    For Tikkis:

    Steam and grate beetroot and potatoes.

    In a bowl, combine with onion, chilies, ginger, crushed peanuts, coriander leaves, rice flour, and salt.

    With greased hands, shape into 9 round tikkis.

    Heat a non-stick pan. Lightly brush it with olive oil. Cook tikkis on both sides over low flame until golden and lightly crisp.

    For Green Chutney:

    Add all ingredients into a blender. Blend into a smooth paste using ice cubes (to retain bright green color). Taste and adjust salt or lemon juice as needed.
