Ingredients

  1. 11/2 cupschickpea flour
  2. 1/2 cupghee
  3. 1 cuppowdered sugar
  4. 1/2 tspcardamom powder
  5. 2 tbspslivered almond, pistachios

    In a non-stick combine the besan (gram flour) and ghee (or coconut oil). Stir to combine. The mixture will look dry and sandy. Continue to mix over a low heat for 10-12 minutes. Do not stop stirring the mixture at any point or you run the risk of burning it. The besan mixture will begin to toast and turn from dry and sandy to creamy.

    Once the mixture is glossy, smooth and pinkish brown in colour (like smooth peanut butter).. Switch off the flame and stir it for 2-3 mins. Then let it sit aside for another 2 mins. Do not let it cool down completely.

    Add sugar and cardamom powder to the warm roasted besan and mix it well until all the sugar dissolves completely.

    Grease a tray or line it with butter paper. Pour the besan mixture into it.
    Spread slivered almonds, pistachios, on top. Set it aside for 3-4 hours in a cool place, do not refrigerate. Once set completely, cut into square or diamond shapes using a sharp knife.

    The besan burfi is ready. Store the burfi pieces in an airtight container for up to 2 weeks.
