Ingredients

  1. 225 gmCurd: 2/3 cup ( whisked)
  2. 2 tbspBesan
  3. 1 3/4 cupsWater
  4. 1 tbspCoriander powder
  5. 1/4 tspTurmeric powder
  6. 1 pinchCinnamon powder
  7. 1 tbspGhee
  8. 1 pinchAsafetida
  9. 1/4 tspMustard seeds
  10. 1/4 tspCumin seeds
  11. Fenugreek seeds: ¼ tsp (powdered)
  12. 4-5Curry leaves
  13. Green chili: 1 (broken into 2-3 pieces)
  14. 1/2 tspRed chili powder
  15. Salt as per taste
  16. For the pakodi:
  17. 1/4 cupBesan
  18. Water: ¼ cup less 1 tbsp
  19. 1/2 tspRed chili powder
  20. 1/4 tspTurmeric powder
  21. 1 tbspCoriander powder
  22. 1/4 tspCumin seeds
  23. Oil: 1 tbsp + as required for frying
  24. Salt as per taste

Cooking Instructions

    In a plate mix together besan, salt, turmeric powder, red chili powder, cumin seeds, and coriander powder.

    Add water and make neither too thick nor too thin batter.

    Heat oil in a kadai. Take out a tbsp. of hot oil and add it to the batter. Mix well.

    Drop small batches of batter with the help of hand or a spoon.

    Fry the pakodas from both the sides until golden brown.

    Take out in a plate and keep aside. Yummy pakodas are ready!

    In a pan heat curd. Add gram flour and whisk well. Add water and whisk. Stir continuously until a boil comes in the kadhi.

    Add turmeric powder, coriander powder, salt, and cinnamon powder. Stir well. Let simmer for few minutes.

    In a small pan heat ghee. Add asafetida and mustard seeds. Let the seeds crackle. Add cumin seeds and fenugreek seeds and sauté for a few seconds. Add curry leaves, green chili, and red chili powder. Stir well and remove from flame.

    Immediately pour this tadka over the prepared kadhi.

    Let it simmer for a few minutes more. Add the pakodas and let it cook for a few more minutes.

    Garnish with coriander leaves and serve hot with roti, paratha, rice, etc. Lip-smacking “Pakoda Kadhi” is ready!
