Make lightly spiced, simple samosas and enjoy them with Gujarati kadhi for a unique taste.
Cooking Instructions

To make the samosa wrappers, mix the ingredients and knead the flour with lukewarm water to make a stiff dough. Cover and set aside.

Prepare the samosa filling. In a pan, add 3-4 tablespoons of oil, add fenugreek and let it turn red, add onions and sauté, then add the green chili paste, add salt and sauté, add potatoes and mash them, add all spices and mix, sauté for 2-3 minutes, turn off the heat and let it cool.

For the kadhi, mix roasted chickpea flour, salt, turmeric, cumin powder, and 2 glasses of water in a bowl. Heat a pan, add oil, bay leaves, chilies, and asafoetida, then add the mixture, let it boil for 2-3 times. The kadhi is ready.

Start making samosas, take a portion of dough and make balls, roll them into ovals, cut in half. Apply a little water in the middle, join both edges to form a triangle and press, fill with the mixture, apply water and press in the middle. Make all samosas this way.

Heat oil, add samosas, and fry until golden while stirring continuously. Remove them.

Enjoy the samosas with kadhi.
