Ingredients

30 minutes
4 people
  1. forcurd mixture
  2. 1 cupsour curd or mattha
  3. 6 tbspgram flour
  4. 1/2 tbspturmeric powder
  5. to tasteSalt
  6. 3 cupwater
  7. foronion pakoras
  8. 2thinly sliced onions
  9. 1 cupgram flour
  10. 1/2 tbspred chilli powder
  11. 1/2 tbspajwain or carom seeds
  12. to tasteSalt
  13. as requiredWater
  14. as requiredOil for frying pakoras
  15. for kadhi
  16. 1 cupsliced onions
  17. 8-10fenugreek seeds
  18. Pinchhing or asafoetida
  19. 1 tbspchopped ginger
  20. 2green chilli finely chopped
  21. 2dry red chilli broken
  22. 2 tbspmustard oil
  23. to tasteSalt
  24. 1 tbspcumin seeds

Steps

30 minutes
  1. 1

    Take a big bowl. Put yoghurt,salt,turmeric powder and besan or gram flour in it. Make a smooth mixture without any lumps. Keep aside.

    Mix all the ingredients for pakoras in a bowl and fry pakoras. Keep aside.

  3. 3

    In a big pan or kadhai put 2 tbsp oil. Now add cumin seeds and fenugreek seeds. Let them crackle.

  4. 4

    Now add onions and saute for 2-3 minutes.

  5. 5

    Now add green chilli and ginger. Saute. Add broken red chilies.

  6. 6

    Add curd mixture and mix properly.

  7. 7

    When the curry boils add salt. Cook for 15-20 minutes.

  8. 8

    When the curry thickens add pakoras. Stir well.

  9. 9

    Switch off the gas. Cover the pan. Let pakoras soak in it for some time.

  10. 10

    Temper with red chill powder mixed in hot ghee.

  11. 11

    Sprinkle some fresh coriander and serve hot with roti or rice. Tastes best with rice.
