Adjusted recipe of it to make it vegan. I subbed eggs for flax eggs. Almond flour remained 1/2 cup. This worked for me but some might want to add a bit of nut milk for their liking. This recipe makes about 20 - 22 small fritters. I originally found recipe here.... thank you! Use again 👍🏼https://ifoodreal.com/baked-zucchini-fritters-recipe/#recipeHappy cooking! Mara Michelle -
Sauted Veggie Fritters Sauted Veggie Fritters
I came up with this recipe because I had a lot of vegetables in my veggie drawer in the fridge that needed to be used or lost. I had like three zucchini, already chopped onions and also leftover scallop style King oyster mushrooms. Utilized these to create these fritters. This recipe makes around 10 4 by 4 inch fritters. I like the combination of basil pesto and potatoes, so I combined them and cooked them up.Adjust the amount of basil pesto to taste. If you allow them to cool before serving, they'll be less likely to break apart. Recipe by umemodoki cookpad.japan -

Bala-bala / Crispy Vegetable Fritters Bala-bala / Crispy Vegetable Fritters
This food is usually sold as street food together with fried tofu in batter, banana in batter and others. But buying sometimes can be concerning, so better make it my self.Bala-bala comes from the word "bala" which means "messy" or "dirty" in Sundanese (one of our local dialects, usually spoken in West Java) maybe because the shape of it is a lil bit messy so they call this that way.Anyway, have a try!
