Better than Jiffy Cornbread

Southern style Cornbread is good, sure, but growing up my mom always made cornbread from the Jiffy brand box mix. That sweet hint to the Cornbread is what I'm so accustomed to that any other Cornbread seems bland by comparison, except this recipe. Fluffy, moist, and just the right amount of sweetness to bring it all together. Like Jiffy, but we think even better!
Cooking Instructions

Preheat oven to 400°F. Grease a 9x13 baking dish. Set aside.

In a large bowl vigorously wisk together milk, sugar, eggs, and oil/butter.

In a separate bowl wisk together flour, cornmeal, baking powder, and salt.

Add dry ingredients to wet ingredients. Gently stir until just combined. Note: Batter will be lumpy and that's ok. Over-mixing will make tough cornbread.

Transfer to baking dish. Let rest 10 minutes before placing in oven. This actually creates a fluffier cornbread.

Bake 30-35 minutes or until golden on top and a toothpick inserted in the center comes out clean.
