  2. 2 canBlackeyed Peas
  3. 2 canWhite Corn
  4. 2 canRotel Tomatos w/ Green Chilis
  5. 1 bunchGreen Onions
  6. 2 tbspCilantro
  7. 16 ozZesty Italian Dressing

Cooking Instructions

    Open the cans of blackeyed peas, black beans, corn, and Rotel and drain all the fluids.

    Into a large bowl add the blackeyed peas, black beans, corn and Rotel.

  3. 3

    Chop the green onions and add to the bowl.

  4. 4

    Finely chop the cilantro and add two tablespoons to the bowl.

  5. 5

    Add the zesty Italian dressing.

  6. 6

    Chill and serve with tortilla chips. Scoops works best.

I had to come back and say that I had no idea there were so many variations to this recipe! This one is the easiest by far and has always been my go to. I love how you can adjust for taste also. I leave out the cilantro and only use one can of rotel with chilis and another with just plain rotel tomatoes because this suits our taste. Also I halve the recipe without problems if I'm just making it for family. It has always gotten eaten up with no waste.
