Ingredients

  1. 1/4 cupButter
  2. 1Onion, chopped
  3. 2 cloveGarlic, crushed
  4. 4Celery sticks, chopped
  5. 1Red bell pepper, chopped
  6. 1Green bell pepper, chopped
  7. 1 dashCayenne pepper
  8. 1 dashBlack pepper
  9. 1/2 tspThyme
  10. 1 cupLong-grain rice
  11. 14 ozCan, chopped tomatoes
  12. 1 lbMeat (sausage or chicken)
  13. 1 1/2 cupChicken broth or white wine
  14. 1Salt to taste

Cooking Instructions

    Melt butter in heavy pan

    Add onions, garlic, celery, peppers, and spices, and mix well

  3. 3

    Add rice and stir to coat

  4. 4

    Add tomatoes, meat, stock or wine, and salt

  5. 5

    Bring to a boil, stirring well

  6. 6

    Reduce heat, cover, and simmer for15-20 minutes, or until rice is cooked and has absorbed all the liquid

  7. 7

    Serve warm, but is good for leftovers

This is wonderful! Had my doubts, it seemed overly simple, but big hit with the whole family, I don't change a thing.
