Ingredients

  • 1 lbPork
  • 1 lbChicken
  • 1 lbAndouille sausage
  • 1 cupOil (canola or olive)
  • 2 cupOnions (chopped)
  • 2 cupCelery (chopped)
  • 1 cupBell peppers (chopped)
  • 1/4 cupGarlic (diced)
  • 6 cupChicken stock
  • 2 cupMushrooms (sliced)
  • 1 cupGreen onions
  • 1 cupParsley (chopped)
  • 4 cupRice
  • 1 tspCayenne pepper
  • 1 tspOregano
  • 1 tbspCreole seasoning

Steps

  1. 1

    Heat oil in cast iron skillet over medium heat.

  2. 2

    Cook meat until slightly browned.

  3. 3

    Add onions, celery, bell peppers, and garlic.

  4. 4

    Allow flavors to mix for about 15 minutes.

  5. 5

    Add chicken broth, bring to a boil, add rice.

  6. 6

    Add mushrooms, green onions, and parsley - then add the seasonings.

  7. 7

    Allow rice to cook for 25-30 minutes.
