I love this brightly colored pasta salad with its sweet and tangy mix of pasta, veggies and Greek vinaigrette.

Ingredients

  1. 12 ozbox Tri-Color Rotini pasta (uncooked)
  2. 1 bunchRadishes
  3. 1 mediumCucumber
  4. 2 1/4 ozcan Sliced Black Olives
  5. 1 pintscherry or grape sized Tomatoes
  6. 8 ozCrumbled Feta Cheese
  7. Greek vinaigrette
  8. 1/2 cupLemon Juice
  9. 1/2 cupOlive Oil
  10. 3 tspOregano
  11. 1/2 tspSalt
  12. 1/2 tspground Black Pepper

Cooking Instructions

    Cook pasta and drain. Set aside to cool. Do not overcook

    Wash radishes thoroughly then halve and thinly slice about 3/4 cup or 5 radishes.

    Rinse, peel, halve and slice one medium cucumber. Approximately 2 cups

    Drain and rinse can of sliced olives.

    Rinse and halve tomatoes.

    Very gently mix together rotini pasta, radish slices, cucumber slices, tomatoes, black olives and feta cheese (using clean hands works best).

    In a separate bowl, mix together olive oil, lemon juice, oregano, salt and pepper. Pour the dressing on the salad and mix gently.

    Cover and refrigerate at least 1 hour. Serve chilled.

Great ingredients the only thing I changed up was using a Greek salad dressing. After careful consideration on previous comments about it being bitter. Other than that it came out wonderful. Would definitely do this recipe again.
