Ingredients

  1. salad
  2. 2 can15 oz. black beans drained and rinsed.
  3. 1green bell pepper seeded and diced
  4. 1/2 cupfinely chopped red onion
  5. 1red bell pepper seeded and diced
  6. 1 packages10 oz. frozen corn thawed or two cups fresh or one 15 oz. canned corn kernels drained.
  7. 3/4 cupchopped fresh cilantro
  8. 3diced tomatoes
  9. 3 tbspseasoned rice vinegar
  10. 2 tbspApple cider vinegar
  11. 1juice of lemon or lime
  12. 2garlic cloves minced
  13. 2 tspground cumin
  14. 1 tspground coriander
  15. 1chipotle chile in adobo diced (I add two instead of pepper flake)
  16. 1/2 tspred pepper flake or a pinch of cayenne pepper

Cooking Instructions

    Combine beans, onion, bell peppers, corn, tomatoes, and cilantro.

    In a small bowl, whisk together vinegars, lime juice, garlic, cumin, coriander, red pepper flake and chipotle. I use a hand held immersion blender to mix really well.

    Pour over salad and toss gently.

    I let it sit for at least an hour so that flavors will blend. Even better the next day.

    If you like add diced avacado.
