Ingredients

  1. 1 canblack beans, rinsed &drained
  2. 1 cankidney beans, drained
  3. 1green bell pepper, chopped
  4. 1red bell pepper, chopped
  5. 10 ozfrozen corn kernels
  6. 1red onion chopped
  7. 1/2 cupolive oil
  8. 1/2 cupred wine vinegar
  9. 2 tbspfresh lime juice
  10. 1 tbsplemon juice
  11. 2 tbspwhite sugar
  12. 1 tbspsalt
  13. 1 clovecrushed garlic
  14. 1/4 cupchopped fresh cilantro
  15. 1/2 tbspground cumin
  16. 1/2 tbspground black pepper
  17. 1 dashhot pepper sauce
  18. 1/2 tspchilli powder
  19. 1 cancannellini beans, drained & rinsed

Cooking Instructions

    In large bowl, combine beans, bell peppers, frozen corn, and red onion.

    In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, and black pepper. Season to taste with hot sauce and chili powder.

    Pour olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold.
