Ingredients

  1. 4boneless skinless chicken breast, cubed
  2. 5potatoes, cut into 1/2 in cubes
  3. 1/3 cupolive oil
  4. 1 1/2 tspsalt
  5. 1 tsppepper
  6. 1 tbsppaprika
  7. 2 tbspgarlic powder
  8. 1TOPPING
  9. 2 cupmexican blend cheese
  10. 1 cupcrumbled bacon
  11. 1 cupdiced green onion

Cooking Instructions

    Preheat oven 400°

    In a large bowl, mix oil, salt, pepper, garlic powder and paprika.

    Add the potatoes and chicken and stir to coat.

    Add to greased pan and bake for 55-60 minutes, stirring about every 20 minutes.

    While the chicken and potatoes are cooking, fry the bacon and crumble.

    Once the chicken and potatoes are fully cooked, remove from oven and add cheese and bacon and green onions.

    Bake for additional 5 minutes.

    Serve and enjoy!
