Ingredients

  1. 3 kgwhole chicken, cleaned and cut
  2. 3 kgpotatoes, peeled
  3. 400 ggarlic, peeled and crushed
  4. 1 bunchfresh cilantro, finely chopped
  5. 2 tablespoonsolive oil
  6. 1/2 kglemon juice
  7. 1 teaspoonallspice
  8. 1 teaspoonground cinnamon
  9. 1 teaspoonground coriander
  10. 1/2 teaspoonwhite pepper
  11. 3bouillon cubes
  12. 1 teaspoontable salt
  13. 1/2 literwater

Cooking Instructions

    Cut the chicken and rub it with a little of the spices and some oil. Place it in the oven for 40 minutes at 350°F (180°C).

    Slice the potatoes into rounds or your preferred shape. Fry them halfway in oil, let them cool, and place them in a baking dish.

    Heat the olive oil in a pot, then add the crushed garlic and fresh cilantro. Sauté briefly, then add the lemon juice, spices, bouillon cubes, and water. Bring to a boil and taste.

    After the chicken is done roasting, remove it from the oven and take the bones out of the thighs. Place the chicken over the fried potatoes, add the sauce, and cover the dish with aluminum foil. Bake in the oven for 25 minutes.

    Take it out of the oven and you can serve it with rice and vermicelli. Enjoy your meal!
