Creamy Gnoochi Cheese Bake
Some of our favorites combined together for an awesome side dish or meal.
Cooking Instructions

On medium heat, melt butter and add flour.

Whisk until incorporated and cook until light golden color. Up to3 minutes.

Add in sage. Slowly add chicken stock and whisk to insure no lumps.

Add in gnoochi and cook for10 minutes.

Bring to boil then remove from heat.

Add in 1cup of mozzarella and 1 cup asiago cheeses.

Stir until cheese is melted and creamy.

Add in lemon juice. Place in baking dish, add last amount of cheese on top and cook for 25 minutes in a preheated 350°F oven.

Place under broiler for just a minute or two the brown top.

Serve alone or as side dish. A great addition would be 1 cup thawed spinach, drained of liquid or 1 cup thawed broccoli.

As fun as it it to cook every day, it's nice to take a breather once in a while and find shortcuts to ease the work. That happened this afternoon, as I brainstormed for a way to combine leftover gorgonzola we had in the fridge with some mushrooms a neighbour brought over. It might be because my brain is still in Italian mode (per my last recipe for pasta and chicken), but it occured to me that I could add gnocchi to the mix and eliminate prepping a separate starch dish entirely. And so this gnocchi, mushroom, and blue cheese bake was born. Unlike said previous recipe, this dish wasn't quite as straightforward, but it was equally delicious.
