One of my favourite meals growing up was spaghetti. Starting with my moms basic recipe i added to it over the years until i found the perfect, most epic, flavourful mix. Hope you love it as much as my friends and family do :-)

Ingredients

  1. 1/2spanish onion, diced
  2. 1head garlic, minced
  3. 2stalks celery, thinly sliced
  4. 1zuccini, cubed
  5. 1 eachred, yellow, orange, green peppers, diced
  6. 10Roma tomatoes, diced
  7. 1can tomato paste
  8. 1lb ground turkey
  9. 1lb ground chicken
  10. 1bunch fresh cilantro, chopped
  11. 1tbsp fresh basil, chopped
  12. 1tbsp fresh oregano, chopped
  13. 1tbsp Kikkomans soy sauce
  14. 1tsp cajun spice
  15. 1tsp ground black peppercorn
  16. 2tbsp piri piri spice
  17. 1tsp hot sauce (or more to taste)
  18. 1tbsp powdered chicken stock
  19. 1tsp cumin
  20. 1lb spaghettini
  21. 2tbsp extra virgin olive oil
  22. 1cup grated or shaved parmesan cheese for garnish

Cooking Instructions

    In a large pot pour in olive oil, garlic, onions, celery

    Cook on medium-high heat until ingredients are translucent, stirring frequently so as not to burn, about 7 min

    Add both ground meats and cook until no longer pink, 5-8 min

  4. 4

    Add zuccini, peppers, cajun, cumin, piri piri, powdered chicken stock, black peppercorn, soy sauce, hot sauce.

    Continue to cook for 5 min, stirring occasionally

    Add diced tomatoes, fresh chopped herbs

    Simmer on medium-low heat for 30-40 min or until tomatoes are stewed, stirring occasionally

    While tomatoes are stewing, start boiling water for pasta; cook according to package directions for al dente. 8-10 min

    When pasta is in the water, add your tomato paste to your sauce, stirring it in until fully mixed.

    Continue to simmer sauce until pasta is cooked.

    When pasta is done serve with sauce spooned on top and garnish with grated or shaved parmesan for flair. Enjoy!!
