  2. 4 ozTomato Paste
  3. 1/3 cupUnsweetened Coconut Milk
  4. 3/4 cupRoasted Red Pepper, chopped
  5. 3/4 cupRoma Tomatoes, seeded & chopped
  6. 3/4 cupFennel Bulb, chopped (optional)
  7. 1/2 cupCarrots, chopped
  8. 1/2 cupRed Onion, chopped
  9. 3/4 tspChipotle, canned (optional)
  10. 2 tbspItalian Parsley, chopped
  11. 1/4 tspFresh Thyme
  12. 1Sea salt (to taste)
  13. 1Black ground pepper (to taste)

Cooking Instructions

    Add all ingredients to a soup pot.

    Summer on low-medium for 30min, or until vegetables are soft.
