I was supposed to make to Guinness glazed ribs then life happened. My Guinness can has been sitting pretty next to wine in the fridge. The wine was supposed to make some chicken but did not. Several days later, way after St. Patrick’s day, I decided to make myself a Guinness Chocolate Cake.

PS: I broke a lot of rules while baking the cake. My excuse was cooking is an art. Get creative.

Ingredients

35-40 mins
  1. 80 mlGuinness Stout
  2. 125unsalted butter/margarine
  3. 140 gramsplain flour
  4. 30 gramcocoa
  5. 200 gramssugar(or less)
  6. 11/4 tspbaking soda
  7. 80 mlwine (the original recipe calls for sour cream)
  8. 1large egg
  9. 1/2 tspvanilla extract

Cooking Instructions

35-40 mins

    Get your ingredients ready. Preheat your oven to 180 degree C and grease your pan.

    Beat your butter till soft and creamy before adding in the sugar. Ensure all the sugar crystals dissolves

    Beat your eggs till light and frothy. Add in your vanilla extract.

    Sift your flour, baking soda, and cocoa in bits to the egg and butter mixture. Give it a good fold but do not over mix.

    Add in the rest of the dry ingredients and finish up with our main ingredient..Guinness

    Pour your mixture into your baking tin and place it in the oven for 35-40 mins or till ready. Your skewer should come out clean.

    Once ready, let it cool for a few minutes before taking it off the tin.

    For the frosting:

    The original recipe called for cheese cream frosting. I used some left over whipping cream and green food color(no idea if was the right shade)

    PS: Most cake beer/alcohol recipes will require you to melt the butter with the beer over a source of heat so that the alcohol evaporates. I did none of that. i wanted to feel the beer flavor in the cake. Also, I did not use sour cream or cream cheese frosting
