Tiramisu Cream Filled Chocolate Cakes

This is a special cake, I made it in special pans but it can be adapted to 24 standard cupcakes, which would be filled and glazed or 2 – 9 inches cake pans with a generous filling and glazing the top. The cupcakes baking time would be about the same. The cake layers about 20 to 25 minutes. This is well worth the time for a truly beautiful delicious cake!

Ingredients

  1. chocolate cake
  2. 1/2 cupunsweetened cocoa powder
  3. 1/4 cupbuttermilk
  4. 2 cupcake flour
  5. 1 tspbaking soda
  6. 1/2 tspsalt
  7. 1/2 cupsour cream
  8. 1 tspvanilla extract
  9. 4 ozunsalted butter, at room temperature
  10. 1 cupgranulated sugar
  11. 2large eggs
  12. tiramisu cream filling
  13. 8 ozmarscapone cheese, at room temperature
  14. 1 tspvanilla extract
  15. 3 tbspstrong coffee, at room temperature
  16. 1 cupheavy whipping cream
  17. 1/4 cupconfectioners sugar
  18. tiramisu glaze
  19. 1/2 cupheavy cream
  20. 1 tspinstant coffee granules
  21. 6 ozmilk chcolate chips
  22. 1 tbspGodiva dark chocolate liqueur optional
  23. serving sauces and garnish
  24. 1recipe Strawberry Coulis Sauce recipe attached in step #21
  25. 1recipe Coffee Creame Anglaise, recipe attached in step #21
  26. 1/2 dashmulticolor sprinkles

Cooking Instructions

    Make cakes

    Preheat oven to 350. Spay cake molds well with non stick spray and place on parchment lined baking sheet... Have them all facing well side up this picture shows both sides for showing how they look.

    Whisk buttermilk with cocoat powder in a bowl until smooth.

    In another Bowl whisk flour, salt and baking soda.

    In a third bowl combine sour cream.and vanilla

  6. 6

    In a large bowl beat butter and sugar until light and creamy

  7. 7

    Beat in eggs. Then cocoa mixture.

    Stir in flour mixture, alternating with sour cream/vanilla mix, just I.until combined

    Spoon evenly into prepared pans. Bake 15 to 18 minutes, until.a toothpick just comes out clean

    Cool in pans on wire rack. Carefully run a small sharp knife around cake pans to release. Cool well side up.

    Make tiramisu cream filling

    Beat marscapone cheese, coffee and vanilla umtil smooth

    Beat heavy cream until it forms peaks, add confectioners sugar

    Beat in marscapone/coffee mixture until fluffy.

    Fill all cooled cake wells evenly with filling

    Sandwich cakes together with filling in the middle

    Make tiramisu glaze

    Heat cream, coffee granules and chocolate liqueur, if your using, in a small saucepan just until hot

    Pour over chocolate chips and stir until smooth

    While glaze is warm spoon evenly over the filled cakes, add sprinkle garnishing sprinkles while chocolate is still.warm before it sets up so they stick.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US.
