Ingredients

  1. 20nos -corn tortilla chipss
  2. Pico de Gallo & Salsa
  3. 2-ripe tomatoes, seeded and chopped
  4. 1- jalapeno pepper, seeded and finely chopped, for medium to hot heat level
  5. 1-small white onion, chopped
  6. 50 gm- cilantro leaves, finely chopped
  7. Salt- as per taste Cheese Sauce:
  8. 2 tablespoonsbutter
  9. 2 tablespoonsall-purpose flour
  10. 2 cupsmilk
  11. 3/4 poundpepper jack cheese, shredded, about 2 1/2 cups
  12. Additional toppings -
  13. Sour cream
  14. Chopped red cabbage
  15. Chopped black olives
  16. Diced pimento
  17. Sliced avocado

Cooking Instructions

    Arrange corn chips on a large platter
    Combine salsa ingredients in a bowl and set aside for flavor in a medium sauce pot, melt butter and add flour to it,Cook flour and butter 1 to 2 minutes over moderate heat, then whisk in milk. When milk comes to a bubble, stir in cheese with a wooden spoon. Remove cheese sauce from the heat.
    Pour cheese sauce evenly over the massive spread of chips and top evenly with beans and the pico de gallo,Serve immediately

    Serve immediately as is or, garnish with your choice of extra toppings from the toppings list.

    Salsa, sour cream, guacamole to be served necessary for getting authentic Mexican taste
