This is a one of the first recipes that I teach to a human new to cooking. It's simple, satisfying, and much lighter than the fried version. Pair with a little pasta or salad, or pop it in a grinder bun.

Ingredients

  1. 2plump, boneless, skinless chicken breasts
  2. 1egg (a splash of milk if you like) beaten
  3. 1-1 1/2 cupsseasoned breadcrumbs
  4. 1 pack (8 oz)shredded mozzarella (part skim)
  5. 1 large jaryour favorite red sauce
  6. 1/4 cupsgrated parmesan cheese

Cooking Instructions

    Preheat the oven to 350°F

    Pour the breadcrumbs into a plate and the egg into a bowl. Dredge the chicken in the egg and then coat completely in the breadcrumbs and place in a 9 x 9 inch baking dish.

    Bake for 15 minutes

  4. 4

    Remove from oven and cover with sauce. Top with mozzarella cheese, and sprinkle the parmesan cheese evenly over that.

    Return to the oven for 15 minutes or until the cheese is lightly browned.

    Let rest for 10 minutes
