Quick and Easy Chicken and Broccoli pasta

A quick and easy delicious pasta dish for for the whole family. My secret is using the pasta water to add to the sauce.

Ingredients

  1. 4chicken breasts, chopped into small chunks
  2. 1x 250g packet of Broccoli and cauliflower florets
  3. 1large red onion, chopped
  4. 250 gFresh Pasta of your choice
  5. 100 mlcheese and mushroom sauce
  6. Pinchsalt and pepper
  7. 1/2 cubechicken stock
  8. 1/4 cuppasta water, reserved
  9. 2garlic cloves, finely chopped
  10. 2 tablespoonsextra virgin olive oil, plus extra to drizzle in the pasta water
  11. 50 gGrana Padano Parmesan cheese, finely grated

Cooking Instructions

    On a high heat in a large pan, sauté the chicken until golden brown in colour, then set aside in a bowl to add later.

    Sauté the chopped red onion until caramelized. Then add the broccoli and cauliflower with the garlic and stir to combine. Add stock and stir then the Parmesan cheese

    Add the cheese sauce and stir to combine. Then in a separate pot, bring enough water to boil the pasta to a rapid boil add a generous amount of salt and at least 1 tablespoon of olive oil or any oil for that matter will do, so long the pasta does not stick together. Add the pasta and stir to prevent sticking together. Cook for 3-4 minutes.

    Remove the pasta from the pot and transfer to the pan immediately, reserving a little bit of the pasta water. The pasta water gives your sauce a velvety thick and glossy texture and look. (This is my secret 😊)

    Add the chicken back to the pan and stir the pasta so that it costs in all of the sauce. Start adding a little bit at a time of the pasta water to take your sauce to a whole new level. When satisfied with the. Texture of the sauce, season to taste and serve warm.
