After how excellent the salsa verde recipe turned out, I had to tweak it to make a complimentary red salsa. Both can be made pretty easily and pack tons of flavor.

After how excellent the salsa verde recipe turned out, I had to tweak it to make a complimentary red salsa. Both can be made pretty easily and pack tons of flavor.
Cooking Instructions

Roast the garlic, shallot, peppers, and tomatillos. Remove seeds from peppers and set aside.

Drain half the juice from the can of tomatoes and add remaining ingredients.

Rough chop the roasted peppers, shallot, garlic, and tomatillos and add to rest of ingredients.
- 4
Pulse using hand blender or similar device until desired consistency is reached.
- 5
Chill and enjoy.

An old, wrinkled, or damaged pepper will be hard to peel.You can remove or add peppers to you spice level.Use wet paper towel to help remove pepper skin that is stuck to your fingers.I use vine tomatoes.
