This recipe I came up with on a rear kids free morning and wasn't quite sure what to do with my time. I'm sure you other mums know the feeling. ;-)

Ingredients

  1. 1Egg (or the amount you wish)
  2. 1 SliceRye Bread
  3. 1 HandfulSalad (of choice)
  4. Sweet chilli sauce

Cooking Instructions

    Separate the egg and leave the yolk to one side.

    Whisk the egg white fluffy to stiff. Place the egg white on a sparingly oiled pan and make a little whole at the top of the whites, put the egg yolk in.

    Now, spread a little veg-oil with a piece of kitchen roll on to the frying pan. Heat the pan up with a little water away from the egg and put a (glass) lid on. Cook for about 5-10 min. This took me a couple of times to perfect to my taste.

    Whilst the egg is cooking. Assemble the Rye Bread with salad on top. Finish of with the egg and sprinkle the sweet chilli sauce. One of my favourite healthy breakfast recipes!
