For the frosting I ran out of granulated sugar so used half light brown and half granulated, this made the frosting a little grainy but overall a nice cake.

Cooking Instructions

CAKE: In a bowl, combine flour, baking powder, salt

In a separate bowl, beat granulated sugar, brown sugar and 2/3 cup of softened butter
- 3
Add the eggs, one at a time, beating together
- 4
Beat in 1 1/2 teaspoon of vanilla extract
- 5
Beat together the flour mixture with the butter, sugar and egg mixture, alternating with the 2/3 cup of milk
- 6
Place the pecans in a bag and roll over them with a rolling pin to crush the pecans slightly

Add the crushed pecans and butter to a pan and place over heat stirring occasionally

Fold in half of the toasted pecans

Divide the batter between two pans and bake in a preheated oven at a temperature of 350F for 25 to 30 minutes or until dry when pricked with a toothpick

Frosting: Mix together sugar and butter, then stir in vanilla and milk

Once the cake has cooled spread the frosting between the layers and over the top of the cake and decorate with the remaining pecans
