Kinda a Japanese mother sauce. It's a tempura dip, sure, but you find this as the base sauce for dressings, marinades, you name it.

Ingredients

  1. 1/2 cupsoy
  2. 1/2 cupmirin
  3. 1 1/2 cupswater
  4. 1/2 tspinstant dashi granules

Cooking Instructions

  1. 1

Just combine all of the ingredients in a sauce pot and bring to a boil. This will cook off the alcohol in the mirin and help dissolve the dashi.

  2. 2

Play around with the recipe a bit. You might like want to use a little more or less water depending on the application. If you've got access to fresh dashi, sub it for the water and granules. Find the balance that works for you.

Hey Ryan? Sorry to bother you here but I don't have your email address. I'll be swapping out to a new smart phone today and I'm afraid it'll delete my Cookpad account like it did the last time I swapped. So .... just in case!
