Karari Rumali is a very crispy Rumali Roti. Which is served as a starter in many restaurants. Karari in Hindi means 'Karkri' and Rumali means 'Thin Roti'. The karari rumali is like a papad that is in a bowl and is being served with mint chutney. It is definitely similar to the treatment for the eyes. It is very satisfying to eat small pieces of crispy rumali roti with green sauce. Take milk, sugar and salt in a bowl and keep stirring till the sugar dissolves. Then slowly add the flour and knead the soft dough. Now, take the dough in a plate and knead it with the ghee till the dough becomes soft.

Knead the dough evenly, take it out in a bowl, mix it with ghee, knead the dough again, cover it with a damp cloth for half an hour.

After half an hour, knead the dough again for 5 minutes, make 6 equal loaves, knead the dough in oil and cover with a damp cloth.

Sprinkle a little flour on the plate and thin the edges. Then thin the middle part by pressing the hand.

Place an aluminum kadai upside down on gas over high heat for 5 mins, grease it with oil and place the rolled roti on the it and reduce the heat till bubbles form in the roti and roste it by pressing the edges with the cotton cloth. Keep pressing the bubbles while roasting on low heat for 1 minute.

Then turn it over and roste till it becomes crispy on all sides. When it becomes golden brown and crispy, remove from the heat and place on a bowl to cool.

Mix chilli powder, roasted cumin powder and chaat masala in melted butter. When the rumali roti cools down, spread melted butter masala and chopped coriander on it.

So, Karari Rumali Roti is ready.

Serve it with Tandoori chutney.
