Beetroot Quinoa

There are days when I don't feel like investing much time in cooking. All I want is a quick and healthy dinner and yesterday was one such day. I made this meal in less than 15 mins because I had some boiled quinoa lying in my refrigerator. Yes, I usually boil a batch which saves a lot of time and it goes well for 4-5 days.
Just for a change in flavour, this time I added beetroot to my quinoa which is not easy for me to eat in raw form and maybe for you too. Isn't it?
But you definitely will enjoy it in this form. Also I paired this meal with a glass of cucumber raita & the combo was heavenly.

Cooking Instructions

Heat ghee in a pan. Add garlic and saute it for a min or till it turns golden.

Now add beetroot and saute it on high flame for a min.

Next add carrot and peas and mix well.

Next add red chilli powder, cumin powder, black pepper & salt.

Saute this on high flame for min.

Add cooked quinoa and saute on high flame for 40 secs.

Turn flame to lowest and cover with lid for a min.

Turn off the flame and toss in the chopped paneer cubes into the dish.

Serve hot with lauki ka raita/ dahi/Chutney.
