I love cooking! However, I also don’t like using a lot of utensils/dishes. I love making one pot meals. They are tasty and easy to cook, and of course, to clean :)

Here’s my take on the so assumed complex prawns pulao. Please don’t be intimidated by the list of ingredients, trust me, it’s a very simple procedure.

As always, spices are as per your taste. And please keep tasting the dish so that it’s well balanced!

Prawns Pulao

Ingredients

4 people
  1. 2 tablespoonghee
  2. 2medium onions sliced vertically
  3. 4/5green chillies slit length wise
  4. 1 tablespoonginger garlic paste
  5. 2-3green cardamom
  6. 1 inchstick cinnamon
  7. 1star anise
  8. 5/6pepper corns
  9. 1/2bay leaves
  10. 5/6cloves
  11. 1 teaspoongaram masala powder
  12. 1 teaspoondhaniya( coriander) and cumin powder
  13. Bunchcoriander leaves
  14. 1/2 bunchmint leaves
  15. Handfulcashews
  16. 500 gmsoaked basmati rice (soak for 30 mins )
  17. 700 gmcleaned and deveined prawns
  18. to tastesalt
  19. 1/2 tspturmeric powder
  20. to tastered chilli powder
  21. As neededwater

Cooking Instructions

    In a pressure cooker, add whole spices, onions and chillies to ghee and cook till the onions caramelise.

    Add turmeric, ginger garlic paste, salt and chilli powder and let it cook for 2 mins. Add a handful of cashew nuts (optional) and coriander and mint leaves.

    Add prawns and let it cook for a minute or so, and add garam masala, dhaniya powder and cumin powder. Check seasoning and add water (make sure you had half a cup less as there’ll be water from the prawns as well).

    Add soaked basmati rice (soak for 30 mins at least), taste the water and add the lid/whistle and cook for 2/3 whistles in low flame.

    Once the pressure is off, remove the lid, mix the pulav gently to make sure the rice doesn’t break and serve hot! :)
