Aata Bhature with Chole

In this version of this popular dish, I have made it with Aata or Wheat Flour for a change. It has been made with Sharbati Wheat variety. The outcome was soft and melt in mouth Bhature with almost no Oil in them. They were not drenched in excess of it at all like the Maida or All-purpose ones. These were absolutely delicious and turned out really yum. The best part was that the Colour also looked so perfect and pretty. And these were made for Breakfast actually but they were so good that Children wanted them for Dinner too. That's the reason I love these Sharbati Aata Bhaturas so much. This has become a regular feature on my menu ever since I first made them 7 years back. My family loves these so much so that they doesn't like the Bhaturas with Maida even for some emergency reasons.

Cooking Instructions

Wash and soak Chickpeas for 4-5 hours or better still overnight. In a Pressure Cooker, heat Oil and saute Onions with Ginger garlic paste, Salt and the other spices mentioned. Also add some chopped Coriander Leaves. After sauteeing for 5-6 minutes, add Chickpeas and Potato cubes with a big glass of water.

Pressure cook for 8-10 whistles on a high heat. Let the pressure settle down before opening the lid of the cooker. Adjust Salt at this stage. Simmer on a medium heat for 5 minutes more. It's time to dish out yummy Chhole now.

Knead a smooth dough out of all the ingredients mentioned using water as required. Divide the dough into equal sized balls. Roll out a small Puri. Deep fry these Bhaturas in hot Oil on a medium high heat until puffed up and fully done. Serve hot with Chhole.

Enjoy with yummy chole for Breakfast or Dinner. Or even as an excellent Snack option on any given day.
