Potato paranthas are Indian breakfast flatbreads made with whole wheat flour, mashed potatoes, spices, herbs & veggies. These flavorful and delicious paranthas are a stable in our house. They are also jam packed with so many veggies including spinach and carrots. They are commonly topped with butter and served with yogurt, pickles, onions & chutney.

Ingredients

  1. Ingredients for dough (atta)
  2. 2 cupswhole wheat flour (or another flour substitute)
  3. 2 tspoil for kneading if required
  4. 3/4-1 cupwater - use as needed
  5. 1/2 tspchilli powder
  6. 1/4 tspgaram masala
  7. 1/4 tspturmeric powder
  8. 1/2 tspcumin powder
  9. 1/4 cupmethi
  10. Inchgrated ginger or ginger paste
  11. Handfulcoriander leaves
  12. 1 cupmix of veggies: Shredded carrots Chopped spinach, broccoli
  13. Any other veggies
  14. Ingredients for potato filling
  15. Peel, mash the potato
  16. 1/2 tspturmeric powder
  17. 1/4 tspcumin powder
  18. 1/4 tspchili powder
  19. 1/4 tsppepper
  20. 1/4salt

Cooking Instructions

    Boil, Peel, Mash Potatoes. Mix in spices

  2. 2

    Add flour, add water, oil, add veggies. Mix together

  3. 3

    Knead Dough

  4. 4

    Once completed, cover and leave at room temperature for 30 mins

  5. 5

    Roll dough into balls

  6. 6

    Flatten ball and add potato filling

  7. 7

    Pinch together and roll back into ball

  8. 8

    Rolls out into a circle

  9. 9

    Cook on pan for a few mins each side and add butter when done
