Banana Drop Cookies are light and fluffy cookies. They are soft to bite. Easy recipe to use up left over-ripe bananas. It uses regular ingredients. Delicious with a hot cup of tea or coffee.

Banana Drop Cookies are light and fluffy cookies. They are soft to bite. Easy recipe to use up left over-ripe bananas. It uses regular ingredients. Delicious with a hot cup of tea or coffee.
Cooking Instructions

In a bowl, combine flour, baking powder, baking soda, salt and cinnamon powder and set aside.

Powder the sugar and set aside.

Cream sugar, butter and almond essence until light and fluffy. Set aside.

Beat the eggs and set aside.

Mash the bananas. You can blend it in a blender. Do this step last because you can add it immediately to the beaten eggs so that the bananas don't change color.

Add the creamed butter-sugar-essence mixture and stir it well.

Now slowly mix in the dry ingredients. Chill this mixture in the refrigerator for 30 minutes.

The mixture after 30 minutes. To half of the mixture I added dry fruits.

Pre-heat the oven for 5 minutes at 200°C.

Drop teaspoon sized balls of mixture on greased sheets. You can sprinkle cinnamon-sugar mixture, if desired. Bake for about 8-10 minutes or until browned. Cool for 2 minutes and then transfer it to a rack.

You can also drop the batter into silicon moulds and bake for 15 minutes or until browned.

Delicious Banana Drop Cookies/Muffins are ready. Enjoy it with a hot cup of tea or coffee.
