Cauliflower with Spinach is a healthy and nutritious recipe which can be made within minutes.Toasted mustard and cumin seeds alongwith garlic,ginger and onion add a fabulous flavour to a simple but delicious recipe and loaded with iron,vitamins and essential nutrients. Serve with phulkas or naan or jeera rice.
Cooking Instructions

Chop cauliflower into small florets.Cut the white stalk part and chop into small pieces.Discard roots and hard stems of spinach.Chop finely the tender leaves, wash and drain well in strainer.

Heat oil and fry cauliflower in low flame till half cooked.Set aside.Remove excess oil.In 1 tbsp oil fry 1 dry red chilli and set aside. Sprinkle cumin and mustard seeds in the oil.When they splutter,add minced garlic and fry till light brown.Add chopped onion and grated ginger and fry lightly.

Add the chopped spinach.Add turmeric,red chilli powder,coriander powder,chopped green chillies, salt to taste and toss.Add the fried cauliflower and cook till dry.

Garnish with fried dry red chilli and serve hot with phulkas or any Indian flat bread or jeera rice.
