The taste of spring onions in a Mathri is really amazing. I tried it and everyone liked it at home. So sharing the reciy here.
Cooking Instructions

First, take a bowl. Sieve all the flours, baking powder, baking soda and salt and add to the bowl.

Then add all the spices, spring onions, hot ghee, and mix well. Then mix well with fingertips to rub the fat on the mathri mix.

Then mix into a tight dough with water. Keep covered for 20 minutes.

Take small round portions of the dough. Roll them out to thin discs. Prick with fork. Make all mathris in similar way

Dry them in an open plate for 20 minutes. Then heat oil. Fry in small batches on medium heat till crisp and golden from all sides.

Serve with mint chutney, spiced curd and ketchup, sprinkled with mint leaves. Enjoy.
