Ingredients

30 minutes
4 servings
  1. 1/2 cupwhole wheat flour
  2. 1/2 cupmaida
  3. 1/4 cupfine sooji
  4. 1/4 cupFinely Chopped spring onion greens
  5. 1 tspbaking soda
  6. 1/2 tspbaking powder
  7. 1 tspAjwain
  8. 1 tspCumin seeds crushed
  9. 1/2 tspBlack pepper crushed
  10. 1 tspChilli powder (optional)
  11. to taste Salt
  12. 1/4 cupHot melted ghee
  13. as required Cold Water to mix
  14. as neededOil to fry
  15. As neededMint leaves to garnish

Steps

30 minutes
  1. 1

    First, take a bowl. Sieve all the flours, baking powder, baking soda and salt and add to the bowl.

  2. 2

    Then add all the spices, spring onions, hot ghee, and mix well. Then mix well with fingertips to rub the fat on the mathri mix.

  3. 3

    Then mix into a tight dough with water. Keep covered for 20 minutes.

  4. 4

    Take small round portions of the dough. Roll them out to thin discs. Prick with fork. Make all mathris in similar way

  5. 5

    Dry them in an open plate for 20 minutes. Then heat oil. Fry in small batches on medium heat till crisp and golden from all sides.

  6. 6

    Serve with mint chutney, spiced curd and ketchup, sprinkled with mint leaves. Enjoy.
