Sarson ka Saag and Maki ki Roti is traditonal Panjabi food.
Cooking Instructions

Wash Sarson, spinach and methi
At least three times. - 2
Roughly Chop all leaves.

Put them in cooker add one cup water. cover and cook till one whistle.

Remove from fire.let it cool.

Coarsely grind them. keep aside.

Heat ghee or oil in pan add garlic. cook till pink in colour.

Make paste of ginger and green chillies. add in garlic.cook

Now add onion and whole red chilli. Cook till onion is soft.

Add red chilli powder, coriander powder and salt mix.

Add Sarson and spinach mixture. Mix and cook for two mnts.

Add maki ka aata.mix

For maki ki roti.
Take one big bowl.

Add maki ka aata, wheat flour and salt. Make dough by adding water.

Take small portion of dough roll out roti.

Heat griddle on medium heat put roti and cook on both side.

Remove apply butter on roti.

Serve hot with Saag.

That slow cooking which requires patience resulting in real authentic flavours to the dish.Sarson ka Saag with Makki ki Roti is a speciality of Punjab. When toped with butter or may be Ghee and served with radish slices or homemade chaaj, it looks more tempting and reminds you of Punjabi flavours.Made Sarson ka Saag by adding Bathua leaves. Spinach can be added but for 2 servings I preferred just sarson leaves and bathua which came out very well.Sarson Ka Saag seems incomplete without makki ki roti. So made makki ki roti by adding dry Fenugreek leaves along with few spices. It goes perfect by adding grated radish but unable for me to find radish. So I made it with dry Fenugreek.
