Mutton Kebab with leftover meat and rice

Leftover food is the most common for every household during Ramadan. We don't want to waste those leftovers. So made those delicious kebab with mutton pieces from leftover mutton korma and some leftover cooked rice.

Leftover food is the most common for every household during Ramadan. We don't want to waste those leftovers. So made those delicious kebab with mutton pieces from leftover mutton korma and some leftover cooked rice.

Ingredients

  1. 1 cupcooked rice
  2. 7-8small pieces of mutton (boneless) from mutton korma
  3. 1medium onion finely chopped
  4. 2green chillies finely chopped
  5. 1/2 teaspoongaram masala powder
  6. 1/2 teaspoonchat masala
  7. 1 handfulfinely chopped coriander and mint leaves
  8. 1 teaspoonMustard oil
  9. to tasteSalt
  10. 1 teaspoonghee to roast the kebabs+ more 1 teaspoon to smoke
  11. 1small piece of charcoal to give dhanger (smoke)

Cooking Instructions

    Place cooked rice in a blender.

    From leftover mutton korma, tame 6-7 pieces and place in the grinder.

    Grind to make a homogeneous paste

  4. 4

    Transfer the mixture to a dish and add in chopped onion, chopped green chilli, chopped herbs and all the spices and salt as mentioned in the ingredient section.

    Also add in 1 teaspoon of mustard oil.Mix everything well with your hand.

    Take a handful of the mixture and shape into a cylindrical kebab. Place to another dish.

    Similarly make all the kebabs in cylindrical shape.

    Heat a pan with few drops of ghee. And place the kebabs to roast.

    Roast on all the sides to golden brown in medium heat. Bust little ghee in between.

    When the kebabs are done, place a burning charcoal to a small bowl and keep the bowl at the centre of the pan.

    Pour 1 teaspoon of ghee to the burning charcoal and immediately cover the pan.

    Switch off the flame and keep it covered for 2-4 minutes so that smoke will infuse in the kebabs. Your kebabs are done now. Remove the small bowl with charcoal.

    Transfer the delicious kebabs to a serving dish and immediately serve with onion rings and lemon.
