Ingredients

  1. 1 kgmutton
  2. 4whole cloves
  3. 1 1/2 cups of oil
  4. 4whole green cardamom
  5. 2small sticks of cinnamon
  6. 2bay leaves
  7. 4medium sliced onions
  8. 1chopped tomato
  9. 1 cupfresh yogurt
  10. 1 tbspcoriander powder
  11. 2green chillies
  12. 1/2 tspkashmiri red chilli powder
  13. 1 tbspturmeric powder
  14. 2Quartered large potatoes
  15. as per tasteSalt
  16. 1 cupwarm water
  17. 1 tbspginger paste
  18. 1.5 tbspgarlic paste
  19. leavesSome chopped coriander

Cooking Instructions

    First of all, clean and wash mutton. Then marinate mutton by adding yogurt, 1tbsp oil, green chillies,salt, turmeric powder. Keep in refrigerator at least for 1 hour.

    Quarter potatoes. Heat oil in a frying pan. Saute quartered potatoes for 5-7mins. on low flame. When they turn into light brown colour then transfer to a plate and keep aside.

    Slice onions,chop tomato and coriander leaves. Keep in a plate.

    Now, heat oil in pressure cooker and add all the whole spices above-mentioned. Then add sliced onions. Saute them until sliced onions turns into golden brown colour.

    Now, add ginger paste, garlic paste, turmeric powder, salt, kashmiri red chilli powder, coriander powder. Mix everything well and saute for few minutes. Next, add chopped tomato. Again Saute for 5minutes on low flame. When oil leaves the masala then add marinade mutton. Cook for 10 minutes. Now add fried potatoes. Mix well. Keep stirring in intervals.

    Add hot water to cook the mutton for 5 minutes. Then pressure cook for 3-4 whistles. When it's done open the pressure cooker lid add 1 tsp lemon juice and chopped coriander leaves. Keep stirring and when the mutton gravy becomes slightly thick, mutton pieces become tender and oil rises on the top then transfer to the serving bowl. Serve hot mutton korma with steamed rice, naan or Paratha.
