Dhaba style Dal Fry is the most sought after dish amongst many. It’s the easiest recipe yet it’s tough because there are two temperings. Temperings makes this dish the most delectable.
Cooking Instructions

Soak Tuvar Dal and Moong Dal separately for 30 mins, drain and set aside. In a pressure cooker heat ghee, add Dals and roast for 2-3 mins, add red chilli powder, add turmeric powder, salt and cook for 1 mins, add little water and stir. Add 1.5 cups water and mix, put on pressure for 3 whistles

Depressurise and set aside. The texture should be coarse and not smooth

For First tempering
In a pan heat ghee and oil, add chopped garlic and ginger and stir for raw smell to go, add chopped onions and cook until translucent. Add red chilli powder and turmeric powder, salt and mix well.

Add this to the Dal and just blend the ladle once on the Dal gently, don’t mix too much

For Second Tempering
In a wok heat ghee and oil, add cumin seeds, whole red chilli, Hing and stir well, add Kashmiri red chilli powder and mix well. Set aside

Plate and garnish with chopped coriander leaves and drizzle the second tempering
